The group of chemicals in a round about sort of way you are asking about when you are talking about herbs and spices are Alkalords. These are volatile chemical. An example is THC in canabis, nicoteen in tobacco.
Some not all herb and spice (including extracts) contain alkalords. And its these chemicals that fire certain reseptors in the carps head so to speak and you get a reaction from the carp (not always a feeding reaction i might add). Capsaicin is the alkalord in chilles. Have you ever wondered why Black pepper oil, Paprica, garlic are so attractive to carp.? Interesting Bud I may not be able to spell ,but i can catch a carp.
