Tigernuts can be stocked before use without losing any of their unique properties for up to 2 years after purchase. It is important, however, that they be stored in a properly ventilated area (if possible, next to a window) and that in summertime and during hot spells, you remove the plastic that they are wrapped in during haulage. Finally, the tigernuts need to be fumigated every 6 weeks to protect them from any kind of damage that may be caused by bugs or insects.
Information from Tigernuts Traders, S.L. - Tigernuts, Tigernut, Chufas, Chufa, Souchet, Erdmandeln, Erdmandel, Pois Sucrés

I got a bulk sack years ago and kept them in the loft, no probs for a couple of years keeping them but not really the best to bait heavily with. Can't remember where I ordered them from but the sack was straight from Africa, gave them a good cleaning then put them in a bucket. Was covered in dust and mites when I got them and not something I would do again.

5 or 10 kilos should last ages, I got a 25kg sack and binned loads.
